Thai Crunch Salad with Chicken
This is always a hit, whether served as a side or as a lunch main. I eliminate the chicken if using as a side dish.

Ingredients
- 3 cups slaw (red and green cabbage, carrots)
- 1/2 red pepper
- 1 cooked chicken breast
- 2 green onions
- 3 tbsp chopped peanuts
- 3 tbsp fresh cilantro
- DRESSING:
- 4 tbsp peanut butter
- 2 tbsp honey
- 2 tbsp warm water
- 1 1/2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 juiced lime
- 1 tsp toasted sesame seeds
- 1 tsp toasted sesame oil
- 1/4 tsp ground ginger
- 1 small cloves garlic
- salt and pepper
Instructions
- Add ingredients for Thai Peanut Dressing into a mason jar or bowl then shake or whisk to combine. Taste then adjust lime juice and/or add water to thin if necessary.
- Add remaining ingredients into a large bowl. Drizzle desired amount of dressing on top then toss well to combine. Scoop into bowls then serve with lime wedges.
